Zucchini Pizza Boats

We have been trying our best to choose some healthier meals for dinner. I had been wanting to try to make some type of boats with the zucchini from our garden. I LOVE pizza, like a lot. I was truthfully apprehensive about this meal because I didn’t want to mess up something as good as pizza. I was wrong. It was AMAZING! It was so good that I was almost upset because I knew it meant we would be eating a lot less of regular fattening pizza.

Trust me, even if you don’t like veggies or trying new things (I’m super guilty of this last one) you need to give this recipe a shot. Its similar to the zucchini lasagna I’ve made in the past in the fact that there isn’t a significant zucchini flavor.

So here is what you need:

  • Pepperoni
  • Zucchinis
  • Mozzarella cheese
  • Pizza sauce
  • your favorite pizza toppings

That’s it. This is one of my favorite parts about this meal. It is sooo simple, and it takes about 20-25 minutes from start to finish and very little clean up to boot. Now I’m wondering why we don’t have this every week… hmm.

First Things First:

Start by washing, and then slicing your zucchinis in half. I also cut all the ends off just a little bit so that we never bit into a hard stem piece. Next, just take a regular spoon from your drawer and scoop out a thin amount of the inside of the zucchini so that all your filling can fit. I dug just deep enough to get all the seeds out. If you aren’t sure how much you can always practice on one by filling it and then deciding if you scooped out enough.

Pro tip: slice the rounded backside off so that your “boats” sit flat against the pan.

Now you need to fill each zucchini slice with about 2 tablespoons of pizza sauce. All that’s left now is to add your toppings! We actually did two layers of cheese because we used a little bit extra on the top to hold it all together.

I was really just winging this (in true Malori fashion) so I baked them at 350 degrees for about 15-18 minutes and they were great!

We used the left over pizza sauce as an extra dipping sauce. The only negative thing about this recipe I could even think of is that the zucchini gets really hot, so be careful not to burn your mouth! I just cut mine up into pieces instead of biting into it and it was perfect!!

I can’t say enough good things about this recipe. It’s a winner for sure. I hope y’all enjoy it as much as we did!!
